What is MTHFR and Why the Special Diet?

The MTHFR gene provides instructions for making an enzyme called methylenetetrahydrofolate reductase. When a person has a common genetic variation (mutation) in this gene, their ability to convert inactive folate (including synthetic folic acid) into the active, usable form (L-methylfolate) can be compromised. This process is called methylation, and it's vital for detoxification, DNA repair, and mood regulation.

Our recipes simplify this challenge by focusing on foods rich in the bioavailable nutrients your body needs for methylation: natural folate, B12, choline, and betaine. Critically, we exclude foods fortified with synthetic folic acid.
